Dragon Fruit SorbetA recipe for a raw, vegan Dragon Fruit Sorbet. This particular blend of ingredients results in a delicious bubble gum ice cream flavor! This recipe is courtesy of The Raw Alchemist and Alchemy Academy in Bali. HOW TO MAKE DRAGON FRUIT ICE CREAMThis “ice cream” or dragon fruit sorbet recipe is made with frozen fruit and fruit juices. Dragon fruit, or pitaya, is frozen after being cut into cubes, along with frozen bananas. Once your fruit is frozen, it’s easy to put this vegan sorbet recipe together. Simply add your frozen fruit, along with some raspberry puree, and fresh squeezed orange juice, to a high speed blender. Add some scraped vanilla bean or vanilla extract, if desired, and your healthy dessert is complete. You can enjoy this vegan ice cream right out of the blender and it will have a soft serve consistency. If you’d prefer it to be thicker and “scoopable” to put on a cone, you can put it in a shallow dish and cover it, and then freeze it for 2-3 hours. Freezing it overnight will freeze it solid. If this happens, you can always thaw it out a little, and put it back in the blender enjoy it again. TIPS FOR THE DRAGON FRUIT SORBET
Make it Ahead: Be sure to freeze your dragon fruit and bananas the night before you make this recipe. In a deep freeze, you might be able to freeze them in 4 hours.
Switch it Up: Dragon fruit is difficult to find in the States, but you can buy frozen pitaya packs at Whole Foods and other similar retailers. You can also omit the raspberry puree, or use a raspberry or cranberry juice in it’s place.
